Spiced Tigernut Pancakes with Organic Fruit & Almond Butter



1 organic pasture raised eggs

1/4 cup milk alternative (try homemade hemp milk)

1/2 tsp Flavorganics Vanilla Extract

1/3 cup Tiger Nut Flour

1/4 cup Organic Tapioca Flour

1/2 t cinnamon

1/4 t nutmeg

1/8 tsp salt

1 tsp Artisana Organics Raw Coconut Butter

1/4 cup fresh organic berries, chopped

1/4 cup Gopal’s Organic Raw Sprouted Almond Butter


  1. In a bowl, whisk egg with milk alternative and vanilla
  2. In a separate bowl, sift tiger nut flour with tapioca flour, cinnamon, nutmeg and salt
  3. Add wet ingredients to dry ingredients and mix until smooth
  4. In a large pan or griddle, heat 1 tsp coconut butter over med
  5. Pour batter, about 1/4 cup batter at a time, into hot pan to make 4 pancakes and cook 2-3 minutes per side, until golden
  6. Enjoy pancakes topped with almond butter and fresh fruit
